Mixed Vegetable Raita
Raita is an Indian accompaniment i.e side dish consisting of curd seasoned with Indian species and chopped veggies. It is an integral part of Indian meal and mainly served with Biryani, Pulao or Kebabs etc. Adding curd to your meal in the form of Raita is an excellent idea. You can also grate the vegetables like cucumber and carrot or finely chop them. The curd should be thick and fresh.
Occasionally, a tadka/tempering will make Raita amazing. Heat oil, add mustard seeds, finely chopped green chillies, curry leaves. Add tadka to the mixture and it's ready to serve.
Ingredients
- 1/2 cup finely chopped cucumber
- 1/4 cup finely chopped carrot
- 1/2 cup finely chopped onion
- 1/4 cup finely chopped tomato
- 2 cup thick and fresh curd
- 1/4 tsp roasted cumin powder
- 1/4 tsp red chilly powder
- 1/8 tsp sugar (optional)
- Crushed mint leaves
- Finely chopped coriander leaves
- Salt to taste
How to prepare
- Rinse the vegetables and finely chop them. You can also grate cucumber and carrot as per the choice.
- In a bowl, whisk the curd till smooth.
- Season it with roasted cumin powder and red chilly powder.
- Add crushed mint leaves and sugar.
- Add salt just before serving and mix well otherwise it will release water.
- Garnish with chopped coriander leaves. Serve chilled.
