Dosa Aaloo Masala



Dosa is a popular South Indian delicacy made from a fermented batter consisting of rice and lentils. There are many other varieties of Dosa, each differing in proportions of lentils, rice and beaten rice. Among them, one such popular variety is Masala Dosa. It is a perfect blend of crispy dosa with a soft and mushy potato filling.

Today we are bringing you the recipe for Dosa Aaloo Masala which is the main ingredient or filling of Masala Dosa. It is a mixture of potato and sliced onion with the seasoning of turmeric powder.

While preparing this filling, make sure that the potatoes are not over-boiled. Adding urad dal and red chilli powder is optional. Try this version of Dosa Aaloo Masala and don’t forget to share your experience in the comment section.


  • 2 tbsp Oil
  • 1 tsp mustard seeds
  • 1/2 tsp cumin seeds
  • 1 tbsp chana dal
  • 1 tbsp urad dal (optional)
  • 1 inch chopped ginger
  • 1 green chilly, finely chopped
  • 8-10 curry leaves
  • 1/4 cup sliced onions
  • 1/2 tsp turmeric powder
  • 1/4 tsp red chilli powder (optional)
  • 4-5 boiled and mashed potatoes
  • 1/2 tbsp water
  • Chopped coriander
  • 1 tsp lemon juice


How to prepare

  • In a pan over medium heat, add about a tablespoon of oil.
  • Once the oil is hot, add mustard seeds and cumin seeds and allow them to splutter.
  • Add chana dal, urad dal and curry leaves and sauté for a minute or so.
  • Add finely chopped ginger and green chilly and sliced onions and sauté it till they turn translucent.
  • Season it with turmeric powder and salt to taste. You can also add the red chilly powder as per your choice.
  • Add boiled and mashed potato and water. Cover it with a lid and cook it for 3-4 minutes.
  • Add lemon juice and sprinkle coriander leaves on top.
