Sometimes all you need is a plate of fries to make your day better. So here is the recipe to guide you to make café style fries to satisfy your taste buds. Perfect French fries should be crispy from the outside and pillow-soft from the inside.

The secret to making it crispy is to double fry them. Yes, you heard it right. That’s how fast food joints do it and it works. Fry them on medium flame first to cook the insides through, then on high flame to get the crispy exterior.

Ingredients

  • ½ kg Potato
  • Oil for frying
  • Salt to taste

Method of preparation

  • Wash and rinse potato and peel the potato skin, cut it into thick wedges.
  • Rinse the sliced potatoes a couple of times in cold water to remove extra starch.
  • Towel dry the potatoes to remove excess water. It has to be completely drained before you begin the next step.
  • The next step is blanching the wedges. Boil enough water in a large pan, add some salt and dunk the potato fingers in the boiling water for 5 minutes.
  • Drain and pat dry in a towel.
  • Refrigerate them for an hour or so if you have more time.
  • Now heat some oil in a pan and drop the wedges into the hot oil. Make sure you do not overcrowd the pan.
  • Deep fry it for 5 minutes and then drain it on absorbent paper.
  • Now heat the oil in high flame, fry the sticks for 2 minutes until it turns golden crisp. Drain it.
  • Toss salt and chilli powder into the fries and serve hot.

Note

If you like your fries salty, make sure to salt them immediately after frying as salt sticks much better when fries are fresh out of oil.
