Veg Chowmein

The stir-fried noodles along with thinly sliced vegetables and flavoured with Chinese sauces is what makes this recipe so appetizing.
It is better to serve Chowmein immediately in order to achieve the right consistency. Since it takes only a few minutes to cook, you can keep the ingredients ready and toss it just before serving.

Ingredients
For Boiling Noodles
- 1 packet Chinese Noodles
- 1-litre water
- 1 tbsp oil
- ½ tsp salt
For Chowmein
- 2 tbsp oil
- 1/2 cup thinly sliced cabbage
- 1/4 cup thinly sliced capsicum
- 1/2 cup thinly sliced onion
- 1/4 cup thinly sliced carrot
- 1 ½ tbsp finely chopped garlic
- 1 tsp green chilly sauce
- 1 tsp red chilly sauce
- 1 tsp soya sauce
- 1/2 tbsp vinegar
- 1/2 tbsp tomato ketchup(optional)
- 1/4 tsp powdered sugar
- 1/2 tsp black pepper powder
- Salt to taste
For Garnish
- Finely chopped spring onions
- Finely chopped coriander leaves
Method of preparation
For Boiling Noodles-
- Take water in a pan and bring that water to boil and add noodles to it. Boil the same for 10-12 minutes.
- Put 1 tsp oil and ½ tsp salt while boiling noodles. It will make sure that noodles will not stick to each other.
- Strain the noodles with the help of a strainer and wash them with cold water.
For Chowmein-
- Heat the oil in a wok, add onions and stir it so that the raw smell fades away and it becomes a little translucent in colour.
- Add finely chopped garlic and all other sliced vegetables.
- Saute it on high flame. Add boiled noodles and toss it well for 1 to 2 minutes.
- Add the sauces and season it with black pepper powder.
- Add sugar and salt to taste. Toss it well.
- Garnish it with spring onions and finely chopped coriander leaves.
- Serve immediately.
