History of Pav Bhaji

The history of Pav bhaji is believed to date back to the 1850s in Mumbai. The dish is said to have been created by a street vendor who wanted to make a quick and easy meal for the city's working class. Pav bhaji consists of a spiced vegetable curry served with soft bread rolls. The dish quickly became popular and is now a staple of Mumbai's street food scene.

Ingredients

  • Potatoes - 2 medium, boiled and mashed
  • Cauliflower - 1/4 small, boiled and mashed
  • Green peas - 1/4 cup, boiled
  • Carrots - 1/4 small, boiled and mashed
  • Onion - 1 small, finely chopped
  • Tomato - 1 small, finely chopped
  • Green chilli - 1, finely chopped
  • Ginger-garlic paste - 1/2 teaspoon
  • Pav bhaji masala - 1 teaspoon
  • Red chilli powder - 1/4 teaspoon
  • Turmeric powder - 1/4 teaspoon
  • Garam masala powder - 1/4 teaspoon
  • Salt - to taste
  • Butter - 2 tablespoons
  • Lemon juice - 1 teaspoon
  • Coriander leaves - for garnishing

Method of Preparation

  • Heat butter in a pan. Add onions, green chilli and ginger-garlic paste. Fry till onions turn translucent.
  • Add tomatoes and fry for 2-3 minutes.
  • Add all the mashed vegetables, Pav Bhaji masala, red chilli powder, turmeric powder, garam masala powder and salt. Mix well.
  • Add 1/2 cup water and cook for 5-7 minutes.
  • Add lemon juice and coriander leaves. Mix well.
  • Serve hot with Pav.
