If you are looking for a quick bite then this sandwich is perfect for you to appease a sudden hunger pang. All you need is semolina and some veggies seasoned with some spices and milk cream and yes, your open sandwich is ready to eat.

It is a healthy Indian breakfast recipe as well as a tea time snack recipe. The crispness of the bread and the juiciness of the filling contrast beautifully make this an even popular snack.

Semolina, a protein and fibre-rich ingredient that provides a solid base for classic food items like Italian pasta and Moroccan couscous is prepared from Durum wheat.   • The word Semolina is derived from the Latin word “similia” which means flour.
  • When ground into flour, durum wheat is known as semolina. It is believed to have originated from Central Europe and the near East around 7000 BC
  • The most common uses of Semolina are pasta, couscous, bread and semolina puddings.
  • It’s also high in Vitamin B like thiamine and folate which helps in converting food into energy.
  • Additionally, it is also a good source of iron and magnesium. These minerals support red blood cell production, heart health and blood sugar control.

Ingredients

  • Bread Slices
  • 1 cup Semolina (Suji)
  • ¼ cup Milk Cream (Malai)
  • ¼ cup onion, finely chopped
  • ¼ cup tomato, finely chopped
  • ¼ cup capsicum, finely chopped
  • ¼ cup cabbage, finely chopped
  • Coriander leaves, finely chopped
  • Green chillies, finely chopped
  • ½ tsp Black pepper
  • Salt to taste
  • Butter

How to prepare

  • Rinse all the vegetables and finely chop them with the help of a chopper.
  • Take a bowl and mix semolina, milk cream, onion, tomato, capsicum and cabbage.
  • Season it with salt and black pepper.
  • Add chopped coriander leaves and finely chopped green chilly to the mixture.
  • Keep the above mixture aside for 20-25 minutes.
  • Take a bread slice and spread a thick layer of the mixture on the slice.
  • Take a non-stick pan and grease it with some butter on it.
  • Place the above bread slice in such a way that the topping side is facing down on the pan.
  • Bake it till golden brown and then bake the other side also.
  • Serve hot with ketchup.
